Dry brined mine..on the second day.. skin looks so tight I feel like it's going to crack open.
Butter it up w/ herbs 1/2 apple in the neck cavity then 325 for three hours unstuffed.
Keeping it simple Potatoes/ green beens/ dressing gravy with a chocolate soufflé my GFs kid is making.
